Here's a scenario.

If I were to attack/move to an outpost that was visible only via the scan and my squad's ETA is longer than the scan duration, and that outpost I'm moving to gets taken, will my squads move back to origin?

No, i believe they will still attack, you must manually turn your squad around.

Yep, it will still go ahead as launched.

But most people wouldn't really recommend flying blind like this, especially if you have a lot to lose on that outpost.

Yep, if the wreck is picked your squads go on to were the wreck was. Flying blind is not really a good idea, in your place I will use a longer scan...

wreckages disappear after they're taken so you would probably turn around automatically

No you dont, they go on with the attack until they reach the point where the wreck was. They will only turn around when they reach the corresponding ETA or if you turn them manually.
